Description
It’s my birthday today so I thought I would celebrate with this cake batter popcorn! This birthday cake popcorn is coated with a cake batter flavored white chocolate and decorated with sprinkles. It is such a fun and festive sweet treat for a movie night with the kids, or when you need a sweet treat. Also, how cute would this be for party favors for kids birthday parties?!
Ingredients
- 24 cups (2-3.4oz bags) of microwaved popcorn (butter or plain)
- 6 ounces white chocolate (almond bark or vanilla candy coating)
- 1/2 cup funfetti cake mix
- 1/4 – 1/2 cup rainbow sprinkles
- 1/4 cup M&Ms Minis
Instructions
- Pop both bags of popcorn and spread into an even layer on top of your parchment lined baking sheet.
- Using a microwave-safe bowl, melt the white chocolate by microwaving for 45 seconds, and then for 30 second increments making sure to stir well between each microwave session.
- To avoid seizing your chocolate, you’ll want to stop microwaving just before the chocolate is fully melted, and continue to stir to melt the chocolate fully.
- Stir the cake mix into the white chocolate, and mix together until smooth.
- Drop the chocolate mixture all over the over the popcorn. Use a rubber spatula to gently mix the popcorn and fully cover the popcorn in chocolate.
- Scatter the sprinkles and m&ms on top of the popcorn and mix together again.
- Allow the mixture to cool completely. It took at least three minutes before it was fully cool, but you may want to wait longer.
- Break your birthday cake popcorn into pieces and enjoy.
Notes
The leftover cake mix can be frozen in ziplock bags or used to make other desserts.
I removed all of the brown M&Ms from the minis before adding them for a more festive appearance.
