There are two different factories that bake Girl Scout cookies. Each factory has its own recipes and its own names for the cookies. The cookies that you get are based on where you live (and obviously where the factory is.)

- Measuring cups, measuring spoons or kitchen scale
- Mixing bowls
- Spatula

- Silicone baking mat or parchment paper – have you used parchment paper sheets yet? It’s a dream to use. You will never want to go back to using parchment rolls again!
- Hand or stand mixer
- Small cookie scooper I used a 2 tablespoon capacity cookie scooper, but you can also use a 1 tablespoon scooper for smaller cookies!
Helpful Tips to Make Peanut Butter Cookie Sandwiches
- Make sure to use quick-cooking oats, regular oats will not soften and will create a different texture.
- Make sure you beat enough air into the filling that is smooth. Trust me, you don’t want your bag to explode because you can’t get the filling out!
- The cookies are going to spread, I used 2 tablespoon scooper to make these, but if you use the 1 tablespoon scooper, you will have more cookies!
How to make Do Si Dos Girl Scout Cookies
First, you will want to preheat the oven to 350°F/190°C.
Line two baking sheets with parchment paper or a silicone baking mat.
In a separate small-sized bowl, whisk together the flour, salt, and baking soda.
Using a stand or handheld mixer, cream together the butter and brown sugar for 2-3 minutes until it turns light in color.
Scrape down the sides of the bowl with a rubber spatula. Add in the vanilla and egg and mix until well incorporated.
Next, you’ll want to add in the peanut butter and mix until just combined.
Add in the flour mixture and stir together until just incorporated.
Lastly, add in the oats and mix well.
Use your cookie scooper and place dough balls on your prepared baking sheets. Be sure to leave space for them to spread.
Bake for 12-14 minutes.
Allow the peanut butter oatmeal cookies to cool on the cookie sheet for 10 mins before transferring to a wire rack to finish cooling.
While the cookies are cooling, you can prepare the filling.
Using your mixer, beat the butter and peanut butter together until well combined and smooth.
Add in the confectioners’ sugar and milk and mix on medium-high speed until smooth and creamy.
Add the peanut butter frosting to a piping bag and cut off the tip to pipe the filling on the cookies.
Pipe filling onto the flat side of half of the cookies and place a second cookie on top of the frosting, flat side facing the filling.
Store in an air-tight container at room temperature for up to three days.

- ½ cup (113 grams) unsalted butter, room temperature
- 1 cup (200 grams) light brown sugar, packed
- 1 egg, room temperature
- 2 teaspoon (10 milliliters) vanilla extract
- ½ cup (120 grams) creamy peanut butter
- 1 cup (120 grams) all-purpose flour, scooped and leveled
- ½ teaspoon (3 grams) salt
- ½ teaspoon (3 grams) baking soda
- 1 cup (80 grams) quick-cooking oats*
Ingredients for Filling
- ½ cup (120 grams) creamy peanut butter
- ¼ cup (57 grams) unsalted butter, room temperature
- 1 ½ cups (170 grams) confectioners’ sugar
- 1 tablespoon (15 milliliters) milk
Instructions
