Description

Make these easy Do Si Dos Girl Scout Cookies anytime with this copycat recipe. These peanut butter sandwich cookies are made with peanut butter oatmeal cookies and a sweet peanut butter filling.

Ingredients for Cookie

  • ½ cup (113 grams) unsalted butter, room temperature
  • 1 cup  (200 grams) light brown sugar, packed
  • 1 egg, room temperature
  • 2 teaspoon (10 milliliters) vanilla extract
  • ½ cup (120 grams) creamy peanut butter
  • 1 cup (120 grams) all-purpose flour, scooped and leveled
  • ½ teaspoon (3 grams) salt
  • ½ teaspoon (3 grams) baking soda
  • 1 cup (80 grams) quick-cooking oats*

Ingredients for Filling

  • ½ cup (120 grams) creamy peanut butter
  • ¼ cup (57 grams) unsalted butter, room temperature
  • 1 ½ cups (170 grams) confectioners’ sugar
  • 1 tablespoon (15 milliliters) milk

Instructions

  1. Preheat the oven to 350°F/190°C. Line two baking sheets with parchment paper or a silicone baking mat.
  2. In a separate small-sized bowl, whisk together the flour, salt, and baking soda.
  3. Using a stand or handheld mixer, cream together the butter and brown sugar for 2-3 minutes until it turns light in color.
  4. Scrape down the sides of the bowl with a rubber spatula. Add in the vanilla and egg and mix until well incorporated.
  5. Add in the peanut butter and mix until just combined.
  6. Combine the flour mixture and stir together until just incorporated.
  7. Add in the oats and mix well.
  8. Use your cookie scooper and place dough balls on your prepared baking sheets. Be sure to leave space for them to spread.
  9. Bake for 12-14 minutes.
  10. Allow the peanut butter oatmeal cookies to cool on the cookie sheet for 10 mins before transferring to a wire rack to finish cooling.

Prepare the peanut butter filling

  1. While the cookies are cooling, you can prepare the filling.
  2. Using your mixer, beat the butter and peanut butter together until well combined and smooth.
  3. Add in the confectioners’ sugar and milk and mix on medium-high speed until smooth and creamy.
  4. Place the peanut butter frosting into a piping bag and cut off the tip to pipe the filling on the cookies.
  5. Pipe filling onto the flat side of half of the cookies and place a second cookie on top of the frosting, flat side facing the filling.

Notes

  • Make sure to use quick cooking oats, regular oats will not soften and will create a different texture.
  • Make sure you beat enough air into the filling that is smooth.  If it’s not smooth enough it will be difficult to squeeze out of the bags.
