Description

These Strawberry Blueberry Cheesecake Popsicles are not only a perfect summer treat, but they are a great patriotic dessert for Memorial Day or for 4th of July. It’s easy to make, and you can even make a boozy version for the adults, because why should the kids have all the fun?!

Scale

Ingredients

Simple syrup

  • 1/2 cup granulated sugar
  • 1/4 cup water

Strawberry Layer

  • 1 1/3 cup chopped strawberries
  • 3 tablespoon simple syrup

Cheesecake Layer

  • 8 oz cream cheese, room temperature
  • 3 tablespoon simple syrup

Blueberry Layer

  • 1 cup trimmed and quartered blueberries
  • 3 tablespoons simple syrup

To Spike Pops

  • Add 1.5 tbsp of vodka to each layer.

Instructions

  1. Combine the sugar and water in a saucepan and bring to a boil. After the water has reached a boil, remove the pot from heat and allow the water to cool for 20-30 minutes.
  2. Chop up the strawberries, and add them to a blender, along with 3 tablespoons of simple syrup. Blend until smooth.
  3. Pour the mixture into the bottom of the popsicle molds and freeze for at least an hour to set.
  4. After an hour, mix the cream cheese and simple syrup and add to the popsicle molds. Freeze for at least an hour.
  5. Finally, blend the blueberries and simple syrup.
  6. Pour into the molds and add the popsicle sticks.
  7. Freeze for a minimum of 5 hours, or overnight for best results.

Notes

  • You can strain the berries if you’d like or add chopped up berries for added texture.
  • Let each layer have time to freeze or else it will blend together.
