Pecan Pie – The Best Holiday Pie to Make in a Rush

This Simple Pecan Pie Recipe is ridiculously easy to make, and delicious! It is sweet with a caramelized flavor, but isn’t overly sweet. I love that this is such a quick recipe to throw together in a flash because all you have to do is stir together a handful of ingredients and pour it into the crust and toss on the pecans. It truely is great for any holiday get together!

  • Measuring cups, spoons
  • Whisk

  • Pie pan – I really love this one! It’s not as large so my crusts are easier to work with.
  • Pastry brush

What is pecan pie filling made of?

Pecan pie filling is simply a mixture of eggs, corn syrup, dark brown sugar, salt vanilla and topped with pecans.

How to serve pecan pie?

The best way to serve pecan pie is either fresh whipped cream or ice cream to add a creamy note to the sweetness of the pecan pie pie.

Should you refrigerate pecan pie after baking?

Due to the egg content, I recommend that you store the pecan pie in the fridge after it fully cools down.

How do you keep pecan pie from being runny?

If your pie comes out of the oven runny, then you will want to check the temperature of your oven with an external thermometer to make sure that it is running at the correct temperature. My oven runs ten degrees low so I have to set the oven ten degrees higher whenever I use the oven.

You can put tinfoil on top of the pie and continue to bake it at 425-240° F for about 12 minutes.

If the edges are set and the middle is slightly jiggly (like jello) then the pie is done.

How far ahead can you make pecan pie?

You can make your baked pecan pie up to 2 days in advance and store it covered in the fridge.

You can freeze a baked pie for about a month if you wrap it in several layers of plastic wrap and then cover in aluminum foil to avoid freezer burn.

How do you make pecan pie from scratch?

Preheat your oven to 350° F, and line your pie pan with your crust.

You can use either a store-bought crust, or you can use my butter-flavored flakey pie crust recipe. Homemade pie crust is so much flakier than store-bought, so I will always suggest making your own because it will always make your pies taste even more delicious!

In a large bowl, lightly beat 3 eggs. Then, add in the corn syrup, dark brown sugar, melted butter, salt and vanilla extract. Mix well until combined, and pour into unbaked pie crust.

Gently place the pecans on top of the filling in your desired arrangement, or just scatter it on top.

Bake it for 45-50 minutes, or until center is set. A toothpick will come out clean. If the edges are set and the middle is slightly jiggly (like Jello) then the pie is done. The top will still be bubbling as the pie needs to firm up.

Allow the pecan pie to cool for at least two hours before cutting into. Serve with homemade whipped cream or ice cream.

  • 1  9″ unbaked pie crust

  • 1/3 teaspoon salt
  • 1 teaspoon vanilla

Notes

Pecan pie needs to be refrigerated and is good for up to 4 days when covered in the refrigerator.

To bake ahead, you can freeze a baked pecan pie for up to 3 months. Make sure you wrap the pie well or store it in an air-tight container.
