This strawberry brownies recipe is made for strawberry lovers! It’s so tasty and an insanely easy recipe since it’s made with strawberry cake mix. These delicious strawberry brownies are perfect for special occasions like valentine’s day, baby showers, school parties, and easy enough for a weekday dessert!

  • Measuring cups, measuring spoons or kitchen scale
  • 8×8 baking pan
  • Whisk and wooden spoon

  • Nonstick spray

To get started, preheat your oven to 375°F/190°C and grease your pan with nonstick spray. You can also line your 8×8 square baking pan with parchment paper to make it really easy to remove the strawberry blondies from the pan. Set the baking dish aside.

In a large bowl, mix strawberry cake mix, vegetable oil, and large eggs with a whisk or wooden spoon until the mixture is well incorporated.

Use a wooden or rubber spatula to combine the white chocolate chips into the strawberry blondie mixture.

Add the chocolate chips and mix until well incorporated. I reserved some to add on the top of the brownies before baking, but you can mix them all now if you’d like.

Use a rubber spatula to spread the mixture into the prepared pan in an even layer.

Here are the reserved chocolate chips, but you may have added them all in previously.

Bake the strawberry brownies for about 30-35 minutes. You will know they are done when the top sets and a toothpick comes out clean.

These turned out a bit browner than I would have liked, but once they got the glaze on them, they were perfect!

To make the icing, you can just combine the confectioner’s sugar (powdered sugar), heavy cream, and vanilla extract.

When adding the milk, use a small amount and add more if you want the mixture to be runnier. I like the icing mixture to be thicker so that it doesn’t run right off.

Allow the strawberry brownies to cool for at least 15-20 minutes before you pour glaze to the top.

I sprinkled some small pieces of crushed freeze dried strawberries on top and it really dresses it up!

You can store these at room temperature in an airtight container for 3 to 5 days or refrigerate for up to 7 days.

If you want to mix this up, you should try this strawberry glaze with a little bit of lemon juice. It has a great sweet and tangy flavor without being overpowered by the lemon juice.
