Double Decker M&M Brownies

This Double Decker M&M Brownie is a subtly sweet half-brownie half-blondie with an extra pop of crunchy gooey M&M’s to really make it special.   I learned this recipe in college from a friend one summer.  I liked that it is incredibly easy to make, and quick to throw together.

These Double Decker M&M Brownies are a great special treat for your kids to love and is impactful enough for a potluck or holiday get-together. If you want to make these for a Christmas gathering you can look for the holiday M&Ms that come in red and green.

Supplies

  • Handheld mixer, stand mixer or whisk
  • Measuring cups, spoons and/or scale
  • Rubber spatula
  • Large and small bowl
  • 9×13 pan
  • Cooking spray
  • Small spoon

How to make Double Decker M&M brownies

Preheat oven to 350 degrees. Spray 9×13 pan with cooking spray and set aside.

In a large bowl, cream together the butter and sugars. Add eggs and vanilla and mix well. Add flour, baking powder, and salt. Stir well until thoroughly combined.

Split batter in half. You can eyeball it, but you may find it easier to use a scale and split the batter equally. Using a scale will make it easier to ensure that you can easily spread each layer of batter evenly across the pan.

In a small separate bowl, microwave 1 tablespoon butter until melted. It took 15 seconds for my butter to melt. Add cocoa powder to the bowl and mix together. I found that it didn’t fully incorporate until I added it into one of the batter halves. Mix really well until the chocolate is fully combined. Carefully spread brownie batter into an even layer on the bottom of the pan using a small spoon. Spray the bottom of the spoon with cooking spray to help the batter spread. I found that I needed to do this several times as I was spreading the batter.

Take the second bowl of batter and add the remaining 1/4 cup of flour and 1/2 cup of the M&Ms and stir together well. Gently add this layer of batter on top of the brownie layer and spread into an even layer, being careful not to mix the two layers together. You will want to spray the cooking spray on the spoon again as it really helps to spread the batter. Scatter the remaining M&Ms onto the top and pop into the oven

Bake for 25-30 minutes or until the edges start to pull away from the pan. You can also check for doneness by inserting a toothpick into the center of the pan. Small crumbs may come out with the toothpick, but the toothpick should come out dry. Cool completely and cut into squares. Store tightly in a covered container.

Scale

Ingredients

  • 3/4 cup butter, softened
  • 1 cup sugar (200 grams)
  • 1 cup firmly packed light brown sugar (206 grams)
  • 3 large eggs
  • 1 teaspoon vanilla
  • 2–1/4 cups all-purpose flour (210 grams), plus more below
  • 2–1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup cocoa powder
  • 1 tablespoon butter, melted
  • 1/4 cup all-pupose flour (63 grams)
  • 1 cup M&Ms, divided

Instructions
