These Easy No-Bake Peanut Butter Chocolate Oatmeal Bars are so tasty! A smooth peanut butter chocolate layer is sandwiched between a sweetened oatmeal base. While it is still very sweet, it is much lighter than our family’s favorite No-Bake Reese’s Peanut Butter Bars and my No-Bake Special K -Scotcheroo Bars.

Supplies
- Measuring cups, spoons, and measuring scale
- Sauce pan
- Large spoon
- Large bowl
- Rubber spatula
- 8″ square baking dish
- Non-stick cooking spray
- Parchment paper
Instructions on How to Make Easy No-Bake Peanut Butter Chocolate Oatmeal Bars

Line your baking dish with parchment paper. Allow the ends to overlap the edges so you can lift the bars out from the pan after they set. Spray parchment paper with non-stick cooking spray and set aside.
Peanut Butter Chocolate Filling
Add the peanut butter and chocolate to a large microwave-safe dish. Microwave in 30-second increments until melted and smooth, stirring well between each interval.
Oatmeal Base
In the saucepan, melt the butter over medium heat. Add in the brown sugar and salt and stir until the sugar is dissolved. This could take a couple of minutes. Do not allow your mixture to boil. Add vanilla and stir until combined.
Adjust the heat to low and add the oats. Allow the oats to cook for about two minutes, frequently stirring the mixture.
Assemble the Bars
Using a greased rubber spatula (you can spray the spatula with the cooking spray), spread half of the oatmeal base into an even layer. Press down to form a solid layer.
Then, pour the peanut butter chocolate filling on top of the oatmeal base, reserving about 2-3 tablespoons of chocolate to drizzle on top of the bars. Spread into an even layer, making sure to cover the oatmeal base.
Spread the final oat base portion on top of the peanut butter chocolate filling mixture. Again, make sure it is in an even layer, and that the chocolate is thoroughly covered.
Drizzle the remaining peanut butter chocolate filling on the top of the bars.
Allow to chill for at least two hours, or until chocolate is set before cutting and serving.

Notes
These bars will last for a week refrigerated in an air-tight container.
