We are going to learn how to make the Ultimate brownies in a skillet. These brownies are thick, fudgy, have a beautiful crinkle top, and is LOADED with chocolate chip.

The whole time I was eating them I was debating whether they were too chocolatey, but I couldn’t put them down because they were so good!

I was surprised by how easy it was to make brownies in a skillet. I was even more surprised that all I needed to make this was my cast iron skillet and a rubber spatula to mix all the ingredients…. so there were no extra dishes to wash!!

I hate washing dishes so that alone will have me dancing by myself in the kitchen!

Trust me you’re going to want to make these!

How to make the ULTIMATE easy chocolate brownies in a skillet

First, preheat your oven to 325° F.

Then, we are going to melt the butter in your cast-iron skillet over medium-low heat.

Once the butter is melted, you can add the sugar and brown sugar and mix together until the sugar is absorbed.

At this point, you will chill the pan in the refrigerator for about 10 minutes. Place a towel underneath the pan to avoid melting your shelf.

Once the mixture is chilled you can add eggs and vanilla and stir well.
Then, add in the flour, cake flour, cocoa powder, and salt and stir until thoroughly incorporated.

The cake flour will give the brownies a softer, fluffier texture, but if you don’t have cake flour you can use all-purpose flour instead.

Finally, fold in 2/3 of the chocolate chips and level the batter in the pan. Sprinkle the remaining of the chocolate chips onto the top, and bake for 16-22 minutes.

Use a toothpick to check to see if the brownies are done. Insert the toothpick into the center of the pan, and if there are no or very little crumbs sticking to the pan, then it is ready to be taken out of the oven.

Allow brownies to cool for 5-10 minutes, and then cut into squares or scoop directly into serving dishes and top off with ice cream, caramel and chocolate sauce, and whipped cream.

Omigod! this is so good! Rich, chocolatey, fudgy, warm, gooey… soo good!

How long will these skillet brownies last?

Cut brownies will keep for 1-2 days if kept in an air-tight container at room temperature. You can store uncut brownies that are still in the pan for up to 4 days at room temperature if well wrapped, or freeze for up to three months.

What does cake flour do in brownies?

Cake flour has a lower protein count than all-purpose flour so it creates a lighter, fluffier texture. For this recipe, if you don’t have cake flour you can substitute it out for all-purpose flour.

Is butter or oil better in brownies?

Butter and oil can both be used in brownies, but it is the aeration of the butter that gives the brownies a larger rise.

Should butter be melted for brownies?

Using melted butter reduces aeration in your batter. When you cream sugar and softened butter you are incorporating air, but using melted butter doesn’t require as much mixing to combine the butter and sugar. You will be left with a fudgier brownie than if you used softened butter.

What does salt do to brownies?

Salt does more than add saltiness to your brownies. It pulls out flavors more from your ingredients. The salt in these brownies accentuates the rich chocolate flavor.

Do you bake brownies on the top or bottom rack?

I suggest baking your brownies on the middle rack. The middle rack allows for better airflow around the oven and allows it to bake evenly. It also will reduce the likelihood of it burning if it gets too hot

How can you tell if brownies are done?

You will be able to tell if your brownies are done by inserting a toothpick into the center of the pan. If there are very few (or no) crumbs sticking the toothpick, then your brownies are done.

  • 3/4 cup (166 grams) butter
  • 1–1/4 cup (235 grams) sugar
  • 3/4 cup (154 grams) light brown sugar
  • 3 eggs
  • 2 teaspoons vanilla
  • 3/4 cup (103 grams) all-purpose flour
  • 1/3 cup (50 grams) cake flour (can substitute all-purpose flour)
  • 1/2 cup (45 grams)  cocoa powder
  • 1/4 teaspoon salt
  • 1 cup chocolate chips or chunks (153 grams)
