Here are fun St. Patrick’s Day pot of gold cupcakes with a fun and whimsical rainbow. It’s such an easy and creative way to decorate cupcakes, and is a fun recipe to include the kids too!

To decorate these Rainbow Pot of Gold Cupcakes you will need to have cupcakes baked and ready to go. You can either use a box mix or bake cupcakes from scratch.
This vanilla cupcake recipe is my favorite recipe to use for colorful cupcakes because it is baked at a low temperature to create very bright cupcakes when using liquid or gel food coloring.
Place your buttercream frosting into a piping bag (I really like these bags!) with size 1M or 2D tip.
Cut the airhead candy strips in half.
Pipe swirls onto the top of the cupcakes.
Spread a small amount of frosting on top of the wide end of the reeses candies.
Dip the frosting end of the candy into the cup of gold sprinkles.
Place the candy off to the side of the frosting and arc the rainbow candy next to it.

- Mini Reese Cups
