I always thought that homemade pudding must be really hard to make because everyone makes the store-bought version. Boy, was I wrong! I was surprised how EASY it was to make vanilla pudding from scratch, and you can easily make it with stuff you already have in the kitchen! So there is no need to run to the store for this impulse bake! (Do you impulse bake, or is it that just me?)

Here’s what you need to make homemade vanilla pudding

What ingredients do you need to make vanilla pudding from scratch?
- Whole milk
- Granulated sugar
- Cornstarch
- Salt
- Egg
- Vanilla extract
Here’s how to make vanilla pudding from scratch
To start, you will bring two cups of whole milk to a low boil. While you are waiting for it to boil, combine the granulated sugar, cornstarch, salt, remaining milk, and egg into a medium bowl and whisk until completely incorporated.
Once the milk starts to boil, pour the milk slowly into the bowl and whisk together well. Then, transfer back to the pan and allow it to return to a simmer while stirring constantly.
After it reaches a simmer, continue to cook for an additional minute and continue to stir constantly. During this time the mixture will thicken up.
After the minute is complete, remove from heat and add the vanilla and stir well.
If you find your pudding to be clumpy, you can push the pudding through a fine mesh strainer, using a spoon.
Transfer the pudding to a medium sized bowl, and cover with plastic wrap, being sure to press the wrap onto the surface of the pudding to avoid getting a tough skin on top.
Allow to chill in the fridge until completely cooled.
